This easy corned beef recipe is one of my family's favorite meals. We have this throughout the year, at least once a month. It takes a while to cook, but it's so easy.
I usually make this on the nights where I don't have to be anywhere or it's my husband's turn to take the kids to practice.
Corned Beef and Cabbage on the Stove Recipe
I find around St. Patrick's Day that corned beef is expensive. I can only find the larger cuts of meat and I can't afford $20 for a regular weeknight meal.
If you shop early or any other time of year you can find smaller corned beef roasts that are still large enough to feed a family of 5. I usually spend $7 or $8. Make sure to keep corned beef on your shopping list.
Many people think that cooking corned beef and cabbage is hard, but it's a super simple meal to make, it just takes a little more time for the corned beef to cook. My house smells like an Irish pub (so good)! I usually serve with mashed potatoes and/or carrots. This makes FANTASTIC leftovers for sandwiches (if you have any left).
All my children love this meal and clean their plates. I usually make Irish soda bread once a year for St. Patrick's Day to go with it.
Ingredients for corned beef and cabbage recipe
Corned beef brisket– Any size roast will work for this recipe. Just get the amount you need to feed your family.
Beer– the darker the better, but whatever you have on hand will be fine. Don't go buy anything special for this recipe.
Water– The amount you use will vary depending on the size of pot you use and the size roast you purchase.
Cabbage
The best way to cook one-pot corned beef and cabbage stovetop recipe
Step 1
Place corned beef brisket in a large pot on your stovetop. Your meat will probably come with a spice packet and you'll want to add that in too. Add the two beers to the pot and fill with water until the brisket is submerged.
Step 2
Bring to a boil. Reduce heat, cover and simmer. You cook corned beef for about 2 hours and will be VERY tender.
Step 3
Cut cabbage into fourths and at the 2-hour mark, add cabbage wedges to the pot. You can also add in baby carrots if you like those. Cook 30 more minutes for your vegetables to cook.

Stovetop Corned Beef and Cabbage

- Corned beef roast Any size will work
- 2 bottles of beer the darker the better
- water
- 1 head of cabbage

Add corned beef to a large pot. Add the seasoning packet that comes with it. Add two beers to the pot and fill with water until the corned beef is submerged.

Bring to a boil. Cover and simmer for 2 hours.

At the 2 hour mark, add leaves of 1/2 cabbage to the pot. Cook an additional 30 minutes.
